Produced in the Modena and Reggio Emilia provinces of Italy by Acetaia Dodi. Made from the Trebbiano, Lambrusco, Sangiovese, Albana, Ancellotta, Fortana and Montuni grape musts.
A dark, bright brown, well balanced tasting liquid with an intense acidic, woody smell. Comes in a 250 ml bottle. It's a perfect companion for raw or finished foods, such as condiments, stews, fish, meat, fruit, or ice cream. Famiglia Dodi is not recommended for use during cooking.
Acetaia Dodi Production Process: This product is obtained by the mixing of cooked grape must and wine vinegar. The mixture is then placed in wood barrels and left to mature for ten years. The mixture is moved between different barrels throughout the maturation phase to develop unique and complex flavour profiles and scents. After maturation, the liquid is then bottled and ready for consumption.
